Off the Southern tip of Italy is Ischia Island. It's world famous for the sourdough yeast that has made the bread on this island for over a thousand years. This sourdough starter is faster than any of the other starters we've used, but not as fast as the instant yeast you buy in the local market. Ischia sourdough starter has a wonderful taste and will probably replace what ever starter your using now.
