Camaidoli Sourdough Starter from Tuscany

Camaidoli small monastery village in Tuscany, Italy. It's become famous for it's sourdough bread. Here at home I was using Ischia only for it's sourdough background taste, but now we're using Camaidoli as it has this sweet small and light texture which is a pleasant change.
